Sushi by Bou is not just dining, it´s a pioneering Japanese experience under the omakase cuisine concept that tantalizes the senses, invites curiosity, and celebrates the art of sushi at Fairmont El San Juan Hotel in Isla Verde. 

In this restaurant, the chef chooses what you eat based on the seasonal availability of the fish, vegetables, and other ingredients.

Sushi by Bou offers two menu options of 12 or 17 courses for an exclusive group of up to 12 people, there’s limited seatings per night. This arrangement creates an interactive dynamic with the chef to create a captivating culinary experience. Besides getting individualized attention by the chef, guests have the treat of enjoying their own mixologist and private host to satisfy every need.

The ingredients originate from all over the world, mainly from the oceans of Japan and the best fish markets in Tokyo. Therefore, each piece of sushi is prepared adjusting to existing ingredients making every visit unique and every bite masterful. The menu offers handrolls and other a la carte choices including desserts like the coveted mochi ice cream, artisanal cocktails, highballs, imported saki, saki flights and a selection of Japanese beers. 

Sushi by Bou is located just steps from the charming hotel lobby, like a speakeasy where everyone wants to discover it. The restaurant has the appeal of the architectural elements of El San Juan hotel but with a modern and polished touch due to its furnishings, design, and lighting. Each one of its locations is characterized by its interior design, with a different and exclusive theme that is adapted to the character of where each is situated. Thus, the space in Puerto Rico emulates an entertaining, youthful, and energetic ambiance with vanguardist murals designed by local artists.  

The Sushi by Bou concept was created by SimpleVenue in New York. During the last years, SimpleVenue has engraved a footprint in the U.S. mainland opening numerous state-of-the-art sushi concepts specializing in the omakase experience. The restaurant is open Mondays and Thursdays from 6 p.m. to 11 p.m., Fridays from 6 p.m. to 1 a.m., Saturdays from 5 p.m. to 2 a.m., and Sundays from 5 p.m. to 11 p.m. For information or to make reservations, visit http://www.sushibybou.com.
